Nutrition and Behavior Modification

Through the National Center for Food Safety and Technology (NCFST), IIT is testing the chemical and physical properties of food. Researchers are also examining the interaction and influence of environmental and behavioral factors in diet-disease outcomes.
ECDRE members are also studying how behavior modification complements good nutrition and physical activity.
The collaboration on educational activities on nutrition and behavior modification leverages the web-based educational software developed at IIT (Glucosim and FoodFit) to enable students and the public to investigate the effects of food choices, physical activity, and insulin administration on healthy eating and regulation of blood glucose levels.
