The subcommittee is close to finalizing the example for the course, opting to keep it uncomplicated to facilitate understanding and training.
January 9, 2014
Reviewed and finalized the Omelet Food Safety Plan example and reviewed comments on Verification Chapter.
January 16, 2014
Sanitation chapter reviewed and determined to be too long. Much of the discussion on Environmental Monitoring and Zoning will be moved to a newly created appendix.
January 23, 2014
Objectives for curriculum Shakedown and Pilot sessions were discussed and potential invitee list was created. Sanitation Control Plan chapter will be reorganized to focus on rule requirements, with additional information included as an appendix.
January 30, 2014
Reoganization of the Sanitation Chapter was discussed. The focus is on how to develop a Sanitation Controls Plan, not on how to sanitize. Examples need to be available to provide a vision to small processors on what they need to do.

The sanitation chapter is near completion. Elements on how to clean will be moved to an appendix and the chapter will focus on how to build a Sanitation Control Plan

Revisions to the Allergen Control Plan chapter were discussed including required elements for the Allergen Control Plan as well as allergen management practices that help to support allergen controls. Supplier control is an important element of allergen management and the best placement for this information needs to be determined.
Record-keeping and Recall chapters were finalized unless those not in attendance identify substantive issues that require further discussion.

The Supplier Approval and Verification chapter was reviewed and, with minor modification, is deemed sufficient until proposed or final rules on the topic are published.
April 3, 2014
Sanitation chapter was finalized and chapters were assigned for Shakedown presentations.

Allergen Control Plan chapter finalized for Shakedown. Format for Shakedown materials discussed.
April 17, 2014
Discussed Supplier Verification and Resources chapters for Shakedown. Both of these chapters will require substantial modification related to availability of the proposed rule and guidance, thus they will serve as a place holder for Shakedown.
April 24, 2014
All chapters and the omelet example are ready for Shakedown and distributed to presenters.
Plans for the curriculum Shakedown, to be held May 28-30 were discussed. Presenters have the information they need to prepare, an evaluation form was determined, and the agenda is set.
June 17, 2014
Feedback from the Shakedown was reviewed, and a revised organizational structure for the curriculum was developed to simplify the material. Chapter review will occur online with fewer calls to facilitate delivery of material in time for the Steering Committee meeting in September.

Consensus was reached on a reorganized table of contents and the introduction chapter. This sets the stage for revisions based on Shakedown feedback.

Chapter 1 (Introduction) and Chapter 2 (Food Safety Plan Overview) were deemed ready for Steering Committee face-to-face meeting in September. A new structure for Chapter 3 (GMPs) requires another round of revision.

Chapters are being reviewed for use in the next face-to-face Steering Committee meeting on September 9-10.

Process Controls and Hazard Analysis chapters were approved for use at the Steering Committee, recognizing that updates will be needed after the Supplemental Notice is published.
