Visual Characteristics
Very large lima bean shaped seeds, have a scar that is large, white, flattened, and somewhat concave. Seed colour varies from shiny black to violet-black mottled red (oxblood carmine).
Growing Characteristics

Annual
Space 6-9 inches (15-22 cm) for planting. Requires full sun exposure.
Seed type is open pollinated.
Growth habit is climbing.
61 to 70 days to maturity.
Large climbing plant reaches 12-15 feet. Its leaves are dark green, with underside of veins, tinged purple. Bean-like flowers are scarlet and very large (1 inch wide). There are approximately 20 flowers on each flower stalk. Dark green pods are somewhat brittle and stringy, with firm course flesh. Their size ranges from medium to very long.
The scarlet Runner is planted mostly as an ornamental because of its rapid
growth and abundance of large, red-orange coloured flowers.
Common growing regions in the United States:
Florida, Texas, Ohio
Propagation methods are: from seed — sow indoors before last frost, from seed — direct sow after last frost. Allow pods to dry on plant, break open to collect seeds.

History of Plant

First described in 1750, this plant has a long history in Great Britain.

Food Use

Both pods and the green shelled beans are edible in the fresh stage and are
sometimes substituted for lima beans. The root is often eaten by Central
American Indians.
Long beans are always sliced into half-inch lengths and are a favorite in Britain.

Recipes

Pretty Scarlet Runner Salad
Serves 6
2 cans Westbrae Natural Scarlet Runner Beans, rinsed and drained
6 oz feta cheese, crumbled
I small shallot, minced
1 tablespoon Ham® Apple Cider Vinegar
3 tablespoons Ham Walnut Oil
Ham Sea Salt and pepper to taste
1/4 cup fresh parsley, chopped
2 tablespoons walnuts, toasted and chopped
Place beans in serving bowl lined with paper towel to absorb any excess liquid. In a small bowl, mix feta cheese, shallot and vinegar. Let sit for 5 minutes. Then add salt and pepper to taste. Mix in oil. Remove paper towel from beans and pour on dressing. Fold in parsley. Let stand for I hour at room temperature, then refrigerate. Toss in nuts before serving.
