THE ALLERGEN SEQUENCE DATABASE.
To facilitate the use of sequence comparisons in assessing the potential allergenicity of proteins used in foods, three databases of known allergen sequences have been constructed. These databases contain accession numbers for food allergens, non-food allergens, and wheat gluten proteins.
The initial construction of these databases were described in: Gendel, S. 1998. Sequence Databases for Assessing the Potential Allergenicity of Proteins Used in Transgenic Foods. Advances in Food and Nutrition Research 42; 63-92. The databases presented here have been updated from that publication.
